- 150g vegan butter or coconut oil (melted)
- 3 large apples (peeled and diced)
- 50g brown sugar (¼ cup)
- 1 tsp cinnamon powder
- 2 tsp cornstarch
- 68g all-purpose flour (½ cup + 1 tbsp)
- 50g brown sugar (¼ cup)
- 70g vegan butter or coconut oil
- 40g oats (6½ tbsp)
- ½ cup chopped nuts
- ¼ tsp cinnamon powder
- 260g cashews (unsalted and preferably raw)
- 250g firm silken tofu
- ½ cup maple syrup or sugar
- ¾ cup vegan yogurt (or more silken tofu, blended)
- 2 tbsp lemon juice
- 1 tbsp cornstarch
- 2 tsp vanilla extract
- ¼ tsp salt
Instructions
- Prepare the crust by crushing vegan cookies and mixing with melted vegan butter. Press into the bottom of a springform pan.
- Cook diced apples with brown sugar and cinnamon until softened. Mix in cornstarch to thicken.
- Combine flour, brown sugar, oats, chopped nuts, vegan butter, and cinnamon for the crumble topping.
- Blend soaked cashews, silken tofu, maple syrup, vegan yogurt, lemon juice, cornstarch, vanilla extract, and salt until smooth for the cheesecake layer.
- Layer half of the cheesecake filling on the crust followed by half of the spiced apple mixture; repeat layers and finish with crumble topping.
- Bake in a preheated oven until set and golden brown. Cool completely before refrigerating.
