  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck
  • 2 tablespoons olive oil
  • 1 medium white onion
  • 3 jalapeno peppers
  • 2 cups beef stock
  • 2 tablespoons masa harina (optional)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2.5 cups water
  • 1 tablespoon brown sugar

Instructions

  1. Toast dried peppers in a dry pan for 1-2 minutes until fragrant.
  2. Remove stems and seeds; soak toasted peppers in hot water for about 20 minutes.
  3. Blend softened peppers with soaking water and salt until smooth.
  4. Season cubed beef with cumin, salt, and pepper.
  5. Sear seasoned beef in olive oil until browned; set aside.
  6. Sauté onions and jalapeños in the same pot for about five minutes.
  7. Add minced garlic; cook for an additional minute.
  8. Stir in seared beef and chili paste; cook for 2-3 minutes.
  9. Add beef stock, water, brown sugar, and masa harina if using.
  10. Bring to a boil; reduce heat and simmer covered for about two hours or until beef is tender.
