  • 1 whole turkey (fresh and all-natural)
  • 1/2 cup melted butter
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • 1 cup softened butter
  • 2 tablespoons fresh sage, stem removed and chopped
  • 2 tablespoons fresh rosemary, stem removed and chopped
  • 1 tablespoon fresh thyme, stem removed and chopped
  • 1 whole lemon, zested
  • 4 cloves garlic, minced
  • 3 teaspoons sea salt

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Prepare a roasting pan with two cups of water.
  3. Combine melted butter, white grape juice, and stock in a saucepan; warm until mixed.
  4. Create an herb butter by mixing softened butter with chopped herbs, lemon zest, minced garlic, and sea salt.
  5. Rub herb mixture under the skin of the turkey and over its surface.
  6. Stuff the cavity with aromatics if desired.
  7. Cover the turkey with soaked cheesecloth and place in the oven.
  8. Baste every 20-30 minutes until thigh meat reaches 180-185°F (82-85°C).
  9. Remove cheesecloth before serving for a golden finish.
