- 1 whole turkey (fresh and all-natural)
- 1/2 cup melted butter
- 2 cups dry white grape juice
- 2 cups chicken or turkey stock
- 1 cup softened butter
- 2 tablespoons fresh sage, stem removed and chopped
- 2 tablespoons fresh rosemary, stem removed and chopped
- 1 tablespoon fresh thyme, stem removed and chopped
- 1 whole lemon, zested
- 4 cloves garlic, minced
- 3 teaspoons sea salt
Instructions
- Preheat oven to 300°F (150°C).
- Prepare a roasting pan with two cups of water.
- Combine melted butter, white grape juice, and stock in a saucepan; warm until mixed.
- Create an herb butter by mixing softened butter with chopped herbs, lemon zest, minced garlic, and sea salt.
- Rub herb mixture under the skin of the turkey and over its surface.
- Stuff the cavity with aromatics if desired.
- Cover the turkey with soaked cheesecloth and place in the oven.
- Baste every 20-30 minutes until thigh meat reaches 180-185°F (82-85°C).
- Remove cheesecloth before serving for a golden finish.
