- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder

- Salt and pepper to taste
- 4 ears of corn
- 2 tbsp butter
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/4 tsp chili powder (optional)
- 1 cup long-grain white rice
- 2 cups water
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 can (15 ounces) black beans
- 1 avocado, diced
- Hot sauce, to taste (optional)
- Lime wedges, for serving
Instructions
- In a medium bowl, combine the cubed chicken breasts with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat a large skillet or cast-iron pan over medium-high heat and add the seasoned chicken. Cook for 5-7 minutes per side until golden-brown and fully cooked.
- Choose a cooking method for the corn: grill for 10-15 minutes, boil for 5-7 minutes, or roast for 20-25 minutes.
- In a large bowl, combine corn kernels with mayonnaise, sour cream, cotija cheese, cilantro, lime juice, and optional chili powder.
- Rinse rice under cold water. Combine rinsed rice with water, olive oil, and salt in a saucepan. Bring to a boil, then reduce heat to low and simmer for 18-20 minutes.
