  • 3.4 ounces pumpkin spice instant pudding mix
  • 1 cup sour cream
  • 4 large eggs
  • 1/2 cup water
  • 1/2 cup oil (canola or vegetable)
  • 1 1/2 cups mini chocolate chips
  • 16 ounces cream cheese (softened)
  • 1/2 cup butter (softened)
  • 1/3 cup dark cocoa
  • 34 cups powdered sugar
  • 2 teaspoons vanilla extract
  • black food coloring
  • 2 red hots

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the spice cake mix, pumpkin spice pudding mix, sour cream, eggs, water, and oil until well combined.
  3. Gently fold in the mini chocolate chips.
  4. Pour the batter into a greased bundt pan and bake for 45-50 minutes or until a toothpick comes out clean.
  5. Cool for 20 minutes before inverting onto a plate. Refrigerate for at least 1-2 hours before frosting.
  6. Prepare frosting by blending softened cream cheese, butter, dark cocoa powder, powdered sugar, vanilla extract, and black food coloring until smooth.
