  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt, use more as needed
  • 1 tsp freshly cracked black pepper
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro, roughly chopped

Instructions

  1. Rinse red lentils under cold water until clear.
  2. Heat oil in a large skillet over medium-high heat; sauté garlic, ginger, and serrano peppers for 3 minutes.
  3. Stir in spices and cook for another 30 seconds.
  4. Add rinsed lentils, crushed tomatoes, and coconut milk; stir well.
  5. Reduce heat to low and simmer for 20-25 minutes until lentils are soft.
  6. Stir in lemon juice and chopped cilantro before serving.
