- 2 tablespoons sriracha
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- Pinch of salt
Instructions
- Rinse the jasmine rice under cold water until clear. In a saucepan, combine rinsed rice, coconut milk, water, and a pinch of salt. Bring to a boil, then reduce heat and simmer covered for about 15 minutes. Let sit for an additional 5 minutes before fluffing.
- While the rice cooks, heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper, add to skillet, and cook until golden brown (about 6–8 minutes).
- In a bowl, whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, garlic, and ginger. Pour the sauce into the skillet with chicken and cook for an additional 2–3 minutes until thickened.
- Serve the spicy chicken over coconut rice and garnish as desired.
