Ingredients

Scale
  • 8 mini or Persian cucumbers
  • 1 green onion
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar or white apple vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves
  • 1 tsp crushed red chili flakes

Instructions

  1. Prepare the Cucumbers: Wash and dry cucumbers, cutting off the ends. Slice diagonally at a 45° angle without cutting through entirely, then rotate and slice again for accordion-style pieces.
  2. Make the Dressing: In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and chili flakes. Adjust flavors as desired.
  3. Assemble the Salad: Drizzle dressing over cucumbers and mix gently to combine. Garnish with sliced green onions and sesame seeds before serving.
