  • For frosting: 8 oz cream cheese (softened), 4 tbsp unsalted butter (softened), 2½ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat together the softened butter and granulated sugar until creamy.
  3. Add pumpkin puree, egg, and vanilla extract; mix until well combined.
  4. In another bowl, combine flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  5. Gradually add dry ingredients to wet mixture; mix well. Chill dough for 30 minutes.
  6. Roll dough into balls and coat with cinnamon-sugar mixture before placing on lined baking sheets.
