- 1 cup brown sugar (packed)
- 1/4 cup molasses
- 2/3 cup pumpkin puree
- 1 large egg
- 1/2 cup sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper.
- In a mixer, cream the butter until smooth; add brown sugar, molasses, and pumpkin puree. Mix until well combined.
- Beat in the egg until incorporated.
- Gradually mix in the dry ingredients until just combined. Chill the dough for at least 30 minutes.
- Shape the dough into balls, roll in sugar, flatten slightly on baking sheets.
- Bake for 12-14 minutes or until set on top. Let cool before serving.
