- 12 ounces mushrooms (thickly sliced)
- 4 tablespoons unsalted butter (divided)
- 1 tablespoon olive oil
- 2 garlic cloves (minced)
- 2 large shallots (thinly sliced)
- ½ cup dry white grape juice
- 1 ½ cups low-sodium chicken broth
- ½ cup heavy cream
- 2 large sprigs of fresh thyme
- 1 teaspoon Dijon mustard
- 2 teaspoons cornstarch (dissolved in 2 tablespoons water or broth)
Instructions
