  • ½ teaspoon garlic powder
  • 12 ounces mushrooms (thickly sliced)
  • 4 tablespoons unsalted butter (divided)
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 2 large shallots (thinly sliced)
  • ½ cup dry white grape juice
  • 1 ½ cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 large sprigs of fresh thyme
  • 1 teaspoon Dijon mustard
  • 2 teaspoons cornstarch (dissolved in 2 tablespoons water or broth)

Instructions

  1. Pat the chicken dry and cut into cutlets.
  2. Dredge the chicken in flour mixed with salt, pepper, and garlic powder.
  3. In a skillet over medium heat, brown the chicken cutlets in butter and olive oil until golden on both sides.
  4. Sauté mushrooms in the same skillet until browned, then add shallots and garlic.
