- 20 oz refrigerated three cheese tortellini
- 1 tbsp olive or grapeseed oil
- 1/3 cup dry apple vinegar
- 8 tbsp unsalted butter
- 2 tbsp minced garlic
- 6 oz seafood or chicken stock
- 4 oz cream cheese (softened)
- 2 cups heavy cream
- Fresh baby spinach
- 1/2 cup freshly grated Parmesan
Instructions
- Season shrimp with all-purpose seasoning.
- In a skillet over medium-high heat, sear shrimp for 1-2 minutes per side until pink and opaque; remove and set aside.
- Reduce heat and deglaze pan with apple vinegar; add butter and garlic, cooking until fragrant.
- Stir in flour, then add stock and cream cheese until smooth. Add heavy cream and basil; simmer for about 5-7 minutes.
- Cook tortellini according to package instructions; drain well.
