  • 2 cups cooked white or brown rice or quinoa or cauliflower rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup sliced radishes
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon chopped cilantro (optional)
  • Pickled ginger
  • Nori strips (seaweed)
  • Chopped peanuts or cashews
  • Extra sriracha or soy sauce for drizzling

Instructions

  1. Marinate the shrimp by mixing soy sauce, olive oil, honey or maple syrup, garlic powder, smoked paprika, black pepper, and red pepper flakes in a bowl. Add shrimp and let sit for at least 10 minutes.
  2. Prepare the spicy mayo by whisking together mayonnaise or Greek yogurt, sriracha, lime juice, and soy sauce until smooth.
  3. Heat a skillet over medium-high heat with olive oil. Cook the marinated shrimp for about 2-3 minutes per side until pink and opaque.
