- 2 acorn squash
- ½ pound ground turkey or chicken
- 1 tablespoon olive oil
- ½ large onion (diced)
- 3 cups kale (chopped)
- 1 tablespoon garlic (minced)
- 2 stalks celery (chopped)
- ½ large apple (chopped)
- ½ teaspoon fresh minced thyme
- 2 sage leaves (minced)
- 1 teaspoon minced fresh rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons walnuts or pecans
- ½ cup crumbled feta cheese
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Halve the acorn squash and scoop out seeds. Place cut side down on the baking sheet and bake for 20 minutes.
- In a skillet over medium heat, cook the ground turkey or chicken until browned; remove from skillet.
- In the same skillet, sauté onions in olive oil until soft. Add kale, garlic, celery, apple, and herbs; cook until combined.
- Mix reserved squash flesh into the filling and season to taste.
- Fill each squash half generously with the mixture. Bake for an additional 15 minutes.
- Top with feta cheese and nuts; return to oven for another 5 minutes.
