  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt (for caramel)

Instructions

  1. Preheat your oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter until combined, then press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden. Allow to cool.
  3. Toss sliced apples with brown sugar, cinnamon, and flour and spread over the cooled crust.
  4. In a separate bowl, mix cream cheese and sugar until smooth, then add eggs one at a time, followed by vanilla and sour cream.
  5. Pour the cheesecake mixture over the apple layer and bake for about 60-70 minutes until set but still slightly jiggly in the center. Let cool completely before refrigerating for at least four hours.
  6. For salted caramel sauce, heat granulated sugar until melted and amber-colored; stir in butter, then heavy cream and sea salt.
  7. Once chilled, drizzle salted caramel over each slice before serving.
