- 1 pound fresh salmon fillet, skin removed
- 4 cups fresh spinach, washed and roughly chopped

- Zest from 1 lemon
- Juice from 1 lemon
- Salt and pepper to taste

Instructions
- Cook pasta in salted boiling water until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
- Season salmon with salt, pepper, and lemon juice. Heat olive oil in a skillet over medium heat; cook salmon for about 4-5 minutes on each side until cooked through. Flake into bite-sized pieces.
- In the same skillet, sauté garlic until fragrant (30 seconds), add spinach and cook until wilted (2-3 minutes).
- Lower heat and stir in heavy cream, adding Parmesan gradually until melted. Mix in lemon zest, lemon juice, salt, pepper, and red pepper flakes if using.
- Toss drained pasta with the sauce and flaked salmon, adjusting consistency with reserved pasta water as needed.
