  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and quartered)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

Instructions

  1. Preheat your oven to 375°F. Cut off the top of the garlic head, wrap in foil with olive oil, and roast for about an hour until soft.
  2. Place potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Cook for about 15 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot along with the roasted garlic cloves.
  4. Gently warm the half and half and butter until melted; pour over the potatoes. Season with salt and pepper then mash until creamy.
