  • 1 pound sweet cherry tomatoes
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt/Black Pepper
  • 1 bunch fresh basil (divided)
  • 8 ounces ricotta
  • 1 crusty bread loaf
  • Balsamic Glaze

Instructions

  1. Preheat your oven to 400°F.
  2. In a baking dish, mix cherry tomatoes with olive oil, minced garlic, salt, and pepper. Roast for 20 minutes until slightly burst. Cool and refrigerate.
