Ingredients
- 2 cups cooked jasmine rice
- 3 cups shredded cabbage
- 1 cup sliced cucumber
- 1 red bell pepper
- 1 medium carrot
- 1/2 cup chopped sugar snap peas
- 2 green onions
- 1 tbsp sesame oil
- 2 tbsp soy sauce or tamari
- 2 tbsp chili crisp
- 2 tbsp peanut butter or tahini
- 2 tbsp rice vinegar
- 2 tbsp lime juice
- 1 tbsp honey
- 2 tsp chili crisp
- 1/2 inch piece ginger, grated
- Salt and pepper, to taste
Instructions
- In a bowl, whisk together sesame oil, soy sauce (or tamari), peanut butter (or tahini), rice vinegar, lime juice, honey, grated ginger, salt, and pepper until smooth.
- If not using day-old rice, cook jasmine rice according to package instructions and allow it to cool.
- In a large mixing bowl, combine cooled rice with cabbage, cucumber, bell pepper, carrot, sugar snap peas, and green onions. Gently toss to mix.
- Drizzle the dressing over the salad and toss again. Top with toasted sesame seeds if desired.
