  • 170 grams pumpkin puree
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a small springform pan.
  2. Beat eggs and sugar in a bowl until light and fluffy.
  3. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix gently.
  4. In another bowl, whisk flour, baking powder, and pumpkin spice; gradually combine with wet mixture.
  5. Pour batter into the pan and bake for about 25 minutes. Cover loosely with foil and bake an additional 20 minutes.
  6. Cool completely before glazing with a mixture of powdered sugar, milk, and maple syrup.
