  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)
  • Mini vegan marshmallows (for topping)
  • Graham crackers (crushed) (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Gently fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  6. Drop rounded tablespoons of dough onto a prepared baking sheet about 2 inches apart.
  7. Top each cookie with extra marshmallows, chocolate chips, and graham cracker pieces.
  8. Bake for 12 to 14 minutes until edges are golden but centers are soft.
  9. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
