Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together 1 cup + 3 tablespoons flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 3/4 cup granulated sugar, and spices (cinnamon, nutmeg, cloves).
- In another bowl, combine 1/2 cup pumpkin puree, 1/4 cup milk, 1/4 cup melted butter (or vegetable oil), and 1 1/2 teaspoons vanilla.
- Pour the wet ingredients into the dry mixture and stir until combined.
- Transfer the batter to an 8-inch casserole dish. In a separate bowl, mix 1/2 cup granulated sugar, 1/2 cup brown sugar, and 1/4 cup chopped pecans; sprinkle this topping over the batter.
- Carefully pour 1 1/2 cups very hot water over everything without stirring.
