  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (either light or dark)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a casserole dish.
  2. In a bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until well combined.
  4. Gradually combine wet and dry ingredients until just mixed; pour into the greased dish.
  5. For the topping, mix granulated sugar, brown sugar, cinnamon, and chopped pecans; sprinkle over the batter.
