  • 2 tablespoons olive oil
  • 8 ounces shiitake mushrooms, thinly sliced
  • 2 tablespoons grated fresh ginger
  • 4 cloves garlic, pressed or minced
  • 6 cups vegetable broth
  • 2 tablespoons soy sauce
  • 16 to 20 ounces frozen potstickers
  • 5 scallions, thinly sliced (divided)
  • 3 baby bok choy, leaves separated
  • 2 teaspoons toasted sesame oil

Instructions

  1. Heat 1 tablespoon of olive oil in a large stockpot over medium-high heat. Sauté shiitake mushrooms until golden brown.
  2. Add the remaining olive oil along with ginger and garlic; sauté until fragrant.
  3. Pour in vegetable broth and soy sauce; bring to a boil.
  4. Gently add frozen potstickers, half of the scallions, and bok choy leaves. Simmer for about three to four minutes until potstickers are cooked through.
  5. Stir in toasted sesame oil and season with freshly ground black pepper before serving.
