Ingredients

  • 1 stick butter (1/2 cup)
  • 2 lbs red potatoes (washed)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) with a stick of butter in a 9×13 baking pan to melt.
  2. While the butter melts, cut the red potatoes in half and score each potato.
  3. In a small bowl, mix the grated Parmesan cheese with 2 tablespoons of herb seasoning, salt, and pepper.
  4. Once the butter is melted, sprinkle the seasoning mixture in the pan and place the halved potatoes cut side down on top.
  5. Spray the tops of the potatoes with nonstick cooking spray and sprinkle with remaining herb seasoning.
  6. Bake uncovered for about 40 minutes or until tender.
