- 1 lb ground turkey sausage (or chicken sausage)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 14.5 oz can diced tomatoes, drained
- 2 quarts chicken stock
- 1/2 cup heavy cream
- 1 cup ditalini pasta
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the ground turkey sausage and cook until browned. Remove sausage and set aside.
- In the same pot, sauté the diced onion and minced garlic until soft and fragrant (about 3–4 minutes).
- Stir in the drained tomatoes, chicken stock, dried basil, and oregano. Return the cooked sausage to the pot and simmer for about 10 minutes.
