- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup + 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 2 cups all-purpose flour
- 1 1/3 cups semi-sweet chocolate chips
Instructions
- Preheat your oven to 375°F (190°C) and line cookie sheets with parchment paper.
- In a large bowl, whisk together pumpkin puree, egg (or applesauce), sugars, canola oil, vanilla, and cinnamon until well combined.
- In another bowl, mix salt, baking soda, baking powder, and flour. Gradually fold this into the wet mixture until just blended.
- Stir in the chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets (about 12 per sheet).
- Bake for 10-13 minutes until edges are golden but centers remain soft.
