- 1 7-ounce jar vegan marshmallows fluff
- 2 ½ cups confectioners’ sugar (powdered sugar)
- 1 teaspoon pure vanilla extract
- 2 to 3 tablespoons milk (preferably whole, or half-and-half, or heavy cream)
- 48 M&Ms, Skittles, or other small, round colored candies
Instructions
- Preheat your oven to 350°F (175°C) and line 24 muffin tins with paper liners.
- In a saucepan, bring 1 ½ cups of water to a boil. Remove from heat, whisk in cocoa powder and sugar until smooth, then let cool for 15 minutes.
- In a bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, beat eggs, vegetable oil, sour cream, and vanilla until combined. Add the cooled chocolate mixture and mix again.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Pour batter into muffin liners about ¾ full and bake for 20 minutes or until a skewer comes out clean.
- Cool cupcakes on a wire rack for 10 minutes before transferring them out of the tins.
- For frosting, blend softened butter with vegan marshmallow fluff until creamy. Gradually add confectioners' sugar and vanilla extract while mixing in milk for desired consistency.
- Use a piping bag to frost cupcakes in long bands resembling mummy wraps; add candy eyes.
