  • 1 1/4 cups light brown sugar, packed
  • 1 tablespoon pure vanilla extract
  • 2 eggs, at room temperature
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 12 ounces milk chocolate, melted
  • 2 tablespoons salted butter
  • 3 tablespoons cinnamon sugar

Instructions

  1. In a large bowl, cream together the butter and brown sugar until fluffy. Mix in the vanilla extract and eggs one at a time.
  2. Gradually add flour, baking soda, spices, and salt; mix until combined to form dough.
  3. Roll out the dough to about 1/4 inch thick and cut into pumpkin shapes (with eyes and mouths).
  4. Chill the shapes in the freezer for 15–20 minutes before baking at 350°F for 8–12 minutes until lightly golden.
  5. Cool slightly, brush melted butter on half of the cookies, sprinkle with cinnamon sugar, then sandwich with melted chocolate.
