Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté diced onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and sauté for another 30 seconds. Remove from heat and let cool slightly.
  2. In a large bowl, combine sautéed onions and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper until well mixed.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. Heat remaining olive oil in a skillet over medium heat. Cook each patty for about 5-6 minutes per side until golden brown and cooked through.
  5. Drain on paper towels and serve warm with garnishes or dipping sauces.
