  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain rice (like basmati or jasmine)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or basil for garnish

Instructions

  1. In a large skillet or pot, heat olive oil over medium-high heat. Season chicken with salt, pepper, oregano, paprika, and cumin; brown for about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add more olive oil and sauté onion and garlic until fragrant (about 3-4 minutes). Add bell pepper and cook for an additional 2 minutes.
  3. Stir in long-grain rice; cook for 1 minute. Add drained diced tomatoes and chicken broth; bring to a simmer.
  4. Return browned chicken to the skillet; stir well. Cover and reduce heat; let simmer for about 20-25 minutes until rice is tender and liquid is absorbed.
  5. Gently mix in Kalamata olives and crumbled feta cheese; fluff rice with a fork before serving.
  6. Garnish with fresh herbs if desired.
