Description

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté chopped onion until soft and translucent.
  2. Add minced garlic and cook until fragrant.
  3. Stir in chopped tomatoes, cumin, paprika, turmeric, tomato paste, salt, and pepper. Let simmer for 5 minutes.
  4. Add canned and dry white beans along with vegetable broth. Mix well.
  5. For stovetop: Bring to a boil, reduce heat, cover, and simmer for 25 minutes until dry beans are tender. For Instant Pot: Close lid and set to high pressure for 10 minutes; allow natural release for 10 minutes before opening.
