- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves of garlic, finely chopped
- 4 ripe tomatoes, chopped
- 1 tsp ground cumin
- 1 tsp paprika powder
- ½ tsp smoked paprika powder (optional)
- ⅓ tsp turmeric
- 1 tbsp tomato paste
- Dash of salt & black pepper
- 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
- 1 cup veggie broth
- ¾ cup dry white beans (Cannellini, Navy, Great Northern)
- 1 ½ – 2 cups veggie broth
Instructions
- Heat olive oil in a pot over medium heat. Sauté chopped onion until soft and translucent.
- Add minced garlic and cook until fragrant.
- Stir in chopped tomatoes, cumin, paprika, turmeric, tomato paste, salt, and pepper. Let simmer for 5 minutes.
- Add canned and dry white beans along with vegetable broth. Mix well.
- For stovetop: Bring to a boil, reduce heat, cover, and simmer for 25 minutes until dry beans are tender. For Instant Pot: Close lid and set to high pressure for 10 minutes; allow natural release for 10 minutes before opening.
