  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Dice potatoes and toss with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes until crispy.
  4. In a skillet over medium-high heat, brown ground beef (or turkey) for 5-7 minutes; drain excess fat.
  5. Add taco seasoning and water; simmer for 2-3 minutes until thickened.
  6. Warm black beans and corn in a small pot.
  7. Assemble bowls by layering roasted potatoes, seasoned meat, black beans, corn, and cheese while hot.
  8. Top with sour cream, cilantro, diced tomatoes, green onions, jalapeños (if using), and serve with lime wedges.
