- 4 boneless skinless chicken breasts
- 3 cloves garlic (minced)
- 1 cup chicken broth
- ¾ cup heavy cream
- Juice and zest of 1 lemon
- ½ cup grated Parmesan cheese
- 4 cups fresh spinach leaves
- 2 tablespoons olive oil
- Salt and pepper for seasoning
Instructions
- Start by pounding the chicken breasts to an even thickness and season with salt and pepper.
- Heat olive oil in a large sauté pan over medium-high heat. Cook the chicken for about 3-4 minutes on each side until golden brown. Remove from pan.
- In the same pan, sauté minced garlic for one minute, then add chicken broth, lemon juice, and zest. Scrape up any browned bits before bringing it to a boil.
- Stir in heavy cream and simmer until slightly thickened. Add the spinach and cook until wilted before returning the chicken to the pan.
- Garnish with more Parmesan cheese and serve immediately.
