  • 1/2 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1/2 cup heavy whipping cream
  • 1/2 cup lemon Greek yogurt or lemon curd mixed with whipped cream
  • 1 tbsp powdered sugar
  • 1/2 tsp lemon extract
  • 1/4 cup lemon curd
  • 1 1/2 cups white chocolate or yellow candy melts

Instructions

  1. Prepare the crust base by mixing graham cracker crumbs, melted butter, and sugar. Press firmly into mold cavities and freeze for 10 minutes.
  2. Whip the heavy cream until soft peaks form, then gently fold in the lemon yogurt, powdered sugar, and lemon extract. Chill until ready to fill.
  3. Melt the white chocolate or yellow candy melts, adding food coloring if desired. Coat the mold interiors evenly and allow to set.
  4. Pipe half of the chilled mousse into each mold, add a spoonful of lemon curd, then top with more mousse.
  5. Seal with the crust base and freeze for at least 4 hours until firm.
