- 2 lb thin-sliced beef (or substitute with chicken, tofu, or shrimp)
- 1 lb Korean sweet potato noodles
- 3 medium carrots, julienned
- 1 large white onion, thinly sliced
- 1/2 bunch green onions, chopped
- 6 garlic cloves, minced
- 1/2 lb spinach leaves
- 4 tbsp sesame oil (divided)
- 1 tbsp olive oil
- 6 tbsp soy sauce (or tamari for gluten-free)
- 3 tbsp brown sugar
Instructions
- Cook the noodles: Boil water in a large pot with olive oil. Add sweet potato noodles and cook for about 5-6 minutes until tender yet chewy. Drain and set aside.
- Cook the protein: In a skillet over high heat, cook thin-sliced beef until browned. Season with half of the soy sauce, sesame oil, and brown sugar. Set aside.
- Sauté vegetables: In another skillet, heat olive oil over medium-high heat. Add carrots and onion; sauté until softened. Stir in remaining soy sauce, sesame oil, garlic, and green onions.
- Add greens: Toss in spinach leaves until wilted; mix back into the beef.
- Combine: In a large bowl, blend cooked noodles with the beef and vegetable mixture until evenly coated.
