  • ¾ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs (room temperature)
  • 1 (15.25-ounce) box vanilla cake mix
  • ½ cup neutral oil (vegetable or canola)
  • 1 cup water
  • 3 large eggs
  • 1 cup semi-sweet chocolate chips or chopped chocolate
  • ½ cup heavy cream
  • Fresh raspberries for garnish
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, mix ricotta, sugar, and vanilla until smooth. Add eggs one at a time, mixing gently.
  3. In another bowl, whisk cake mix, oil, water, and eggs until smooth.
  4. Pour cake batter into the prepared dish, then spoon the ricotta mixture over it without mixing.
  5. Bake for 55–65 minutes until golden brown; let cool completely in the pan.
  6. For ganache, heat cream until simmering; pour over chocolate and whisk until smooth.
  7. Pour ganache over cooled cake, top with raspberries, dust with powdered sugar, and chill for at least four hours before serving.
