  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix dry rub ingredients in a bowl and coat the chicken evenly.
  3. In an oven-safe pan over medium heat, cook any bacon substitute until crispy; remove from pan but leave some fat.
  4. Sear the seasoned chicken in the same pan until browned on both sides.
  5. Drain excess fat from the pan; add chopped cabbage and sauté for 2-3 minutes.
  6. Stir in sliced potatoes, onions, and chicken stock; scrape browned bits off the bottom of the pan.
  7. Return bacon or substitute to the mixture and mix well.
  8. Arrange seared chicken on top of vegetables; cover and bake for 45-50 minutes until chicken reaches an internal temperature of 165°F (75°C).
