Description

Ingredients

  • 4 4-6 ounce salmon filets
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado
  • 1 cucumber (sliced)
  • 1 cup edamame (cooked)
  • 1/2 cup sriracha mayo

Instructions

  1. Cut salmon into 1-inch cubes.
  2. In a bowl, whisk together soy sauce, honey, sriracha, minced garlic, and water.
  3. Marinate salmon in the mixture for at least 20 minutes.
  4. Heat oil in a skillet over medium-high heat and cook salmon for 2-3 minutes on each side until crispy.
  5. Pour reserved marinade into the skillet and let it thicken slightly.
  6. Assemble bowls with rice, salmon, avocado slices, cucumber, and edamame; drizzle with sriracha mayo.
  7. Garnish with sesame seeds or red pepper flakes if desired.
