  • 1 lb ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/3 cup honey
  • 2 cups chicken broth
  • 1 cup uncooked white rice
  • 1/4 cup soy sauce
  • 3 tablespoons ketchup
  • 2 tablespoons water
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, black pepper, and salt in a bowl. Form into small meatballs.
  3. Sear meatballs in a skillet until browned.
  4. In a saucepan, combine honey, soy sauce, ketchup, water, and minced garlic; heat until bubbling.
  5. Spread uncooked rice in the baking dish; add bell peppers and peas. Pour in chicken broth and place seared meatballs on top.
  6. Drizzle honey garlic sauce over the dish and cover with foil. Bake for 40 minutes; remove foil and bake another 10–15 minutes until rice is cooked.
