- 1 lb ground beef or ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 1/3 cup honey
- 2 cups chicken broth
- 1 cup uncooked white rice
- 1/4 cup soy sauce
- 3 tablespoons ketchup
- 2 tablespoons water
- 2 cloves garlic, minced
- 1 tablespoon olive oil or butter
- 1/2 cup diced bell peppers
- 1/2 cup frozen peas
- 1/4 cup chopped green onions
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, black pepper, and salt in a bowl. Form into small meatballs.
- Sear meatballs in a skillet until browned.
- In a saucepan, combine honey, soy sauce, ketchup, water, and minced garlic; heat until bubbling.
- Spread uncooked rice in the baking dish; add bell peppers and peas. Pour in chicken broth and place seared meatballs on top.
