Description

Honey Balsamic Roasted Carrots are a delightful side dish that combines the natural sweetness of carrots with a tangy, sticky glaze. This recipe is perfect for any occasion, from busy weeknight dinners to festive gatherings.

Ingredients

Scale
  • 2 pounds carrots
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the carrots thoroughly. Peel if desired and cut into uniform pieces about 1-inch thick.
  3. In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, chopped thyme, salt, and black pepper to create a glaze.
  4. Place the carrot pieces in a large bowl and pour the glaze over them. Toss until evenly coated.
  5. Spread the glazed carrots in a single layer on a baking sheet. Roast for about 25-30 minutes, flipping halfway through until tender and caramelized.
  6. Serve warm, garnished with extra thyme or flaky sea salt if desired.
