  • 1 tbsp butter
  • 1 leek, sliced
  • 2 carrots, cut into large pieces
  • 2 stalks celery, diced
  • 2 cloves garlic, pressed
  • 2 tbsp flour
  • 4 cups chicken stock (or turkey stock)
  • 2 cups cooked turkey (or chicken)
  • 2 large potatoes, cut into chunks
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. Add the leek, carrots, celery, and thyme; cook for about 5 minutes until softened. Stir in pressed garlic.
  2. Sprinkle in the flour while stirring well to create a thick base. Gradually pour in the stock while scraping any bits off the bottom of the pot.
  3. Add potato chunks, cooked turkey, and bay leaves. Cover and bake in a preheated oven at 350°F (180°C) for about 45 minutes.
  4. If desired, stir in cream before serving. Garnish with chopped parsley.
