  • 1 medium yellow onion; diced
  • 4 tsp. garlic; minced
  • 1 lb. ground turkey
  • 1 Tbsp. brown sugar
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup tomato paste
  • 4 cups beef broth (or vegetable broth)
  • 28 ounce can fire roasted crushed tomatoes
  • 15 ounce can kidney beans; rinsed and drained
  • 15 ounce can black beans; rinsed and drained
  • 15 ounce can pinto beans; rinsed and drained

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onions and minced garlic for 3-4 minutes until softened.
  2. Add ground turkey, breaking it apart as it cooks until browned (about 5-7 minutes).
  3. Stir in brown sugar, chili powder, cumin, oregano, salt, pepper, and tomato paste until combined.
  4. Pour in the broth and crushed tomatoes; add rinsed beans. Scrape bottom for flavor bits.
  5. Bring to a boil, then reduce heat to low. Simmer uncovered for 30 minutes, stirring occasionally.
