  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a large bowl, mix pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually fold dry ingredients into wet mixture until just combined; some lumps are okay.
  5. Fill each muffin cup two-thirds full and bake for approximately 18 minutes or until a toothpick comes out clean.
  6. Allow muffins to cool in the pan for five minutes before transferring to a wire rack.
