Ingredients

  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until well combined. Stir in chocolate chips.
  2. Line a cutting board with parchment paper and transfer the mixture onto it. Press down to create an even layer about 1/2-inch thick.
  3. Melt remaining chocolate chips with coconut oil in the microwave in 30-second intervals until smooth.
  4. Spread melted chocolate over the cookie dough base and sprinkle with flaky sea salt if desired.
  5. Chill in the freezer for about 10 minutes until set, then cut into pieces and enjoy!
