  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1 can (20 oz) pineapple chunks, drained (reserve juice)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix chicken pieces with soy sauce, olive oil, honey, minced garlic, ground ginger, paprika, salt, and pepper. Let marinate for 10–15 minutes.
  3. Spread the diced bell peppers and onion wedges on a large sheet pan with the drained pineapple chunks.
  4. Place the marinated chicken on top of the vegetables and drizzle any leftover marinade over everything.
  5. Bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C), stirring halfway through.
