- 1.5 lbs chicken breast, cut into bite-sized pieces
- 1 can (20 oz) pineapple chunks, drained (reserve juice)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 medium red onion, cut into wedges
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons honey (or brown sugar)
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix chicken pieces with soy sauce, olive oil, honey, minced garlic, ground ginger, paprika, salt, and pepper. Let marinate for 10–15 minutes.
- Spread the diced bell peppers and onion wedges on a large sheet pan with the drained pineapple chunks.
- Place the marinated chicken on top of the vegetables and drizzle any leftover marinade over everything.
- Bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C), stirring halfway through.
