  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 plant-based egg wash alternative
  • 2 tablespoons coarse sugar (for sprinkling)
  • Mini chocolate chips or black decorating gel (for eyes)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until thickened (about 5 minutes). Let cool.
  3. Roll out pie crusts on a floured surface and use a ghost-shaped cookie cutter to cut out shapes.
  4. Place half of the shapes on the baking sheet, spoon filling onto each ghost shape, then top with another ghost shape and crimp edges with a fork.
  5. Brush tops with plant-based egg wash alternative and sprinkle with coarse sugar. Use mini chocolate chips for eyes.
  6. Bake for 18-20 minutes until golden brown. Allow cooling slightly before serving.
