- 4 medium sweet potatoes
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/4 cup diced tomatoes (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a parchment-lined baking sheet for 40-50 minutes until tender.
- In a skillet over medium heat, heat olive oil and sauté onion for 3-4 minutes until soft. Add garlic and bell pepper; cook for another 2-3 minutes.
- Add ground turkey to the skillet and cook for about 6-8 minutes until browned and fully cooked.
