Ingredients

Scale
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese’s Pieces

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla until smooth. Scoop dollops onto a parchment-lined sheet and freeze for at least one hour.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla; mix well.
  3. In another bowl, whisk together flour, baking soda, and salt; gradually combine with wet ingredients. Fold in chocolate chips and Reese’s Pieces.
  4. Take two tablespoons of cookie dough, flatten it slightly, place a frozen cheesecake dollop in the center, cover with more dough, and seal edges.
  5. Bake on a parchment-lined sheet at 350°F (175°C) for 12-14 minutes until golden brown. Cool before serving.
