  • 1 Cup Pureed Pumpkin
  • 1 Cup Dairy Free Milk (such as coconut milk)

  • 3 tsp Baking Powder
  • 1 tsp Xanthan Gum
  • Pumpkin Pie Spice
  • Cinnamon
  • Nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, sugars, vanilla extract, pureed pumpkin, and dairy-free milk until smooth.
  3. In another bowl, combine gluten-free flour, baking powder, xanthan gum, pumpkin pie spice, salt, cinnamon, and nutmeg.
